This 100% natural low-GI raw sugar is grown and made in Australia without any artificial additives. It is certified to have a glycemic index (GI) of less than 55, compared to raw or white sugar that has a GI of around 60-65.
The low GI means this sugar is digested and metabolised more slowly than other cane sugar. In turn, this results in a lower and slower rise in blood glucose levels. It has a light golden colour, free-flowing crystalline texture, with a sweet flavour and a light aroma of molasses. As low GI sugar is naturally processed it is very similar to any other raw sugar in its taste, appearance and versatility.
It can be used in the same way as any other sweetener and is suitable for most recipes. It is delicious in hot beverages, raw food treats, baked goods and desserts, or savoury dishes that require a sweet touch.
How to Use:
This sugar adds a lovely natural sweetness to hot beverages. Use the same amount, one-for-one, as you would raw cane sugar. At breakfast try some sprinkled over fresh berries or fruit salad, steaming porridge or rice pudding and let it melt away to a scrumptious syrup.
It can be used in place of rapadura, raw or white sugar in most recipes. It is delicious in including raw treats and baked goods. Use it to replace raw or white sugar in recipes for muffins, slices, biscuits and cakes.
If a finer sugar is required it can be ground – a mortar and pestle is perfect. However, this low-GI sugar may not be suitable for some ‘light’ recipes like sponge cake or meringue, which require lightly textured or colourless sugar.
Add a beautiful sparkle and delectable, sweet crunch to pie crusts and scones by sprinkling a little sugar on top just before baking. This sugar will cream with butter, with a little extra work. Or use it in irresistible toffee or caramel recipes. It is also suitable to use when making or ‘feeding’ Kombucha.
Or use it to balance salty or sour flavours in savoury recipes like tomato sauces, marinades, dry rubs, curries, soup and noodle dishes, or hearty hotpots.
