This goes by many names, burghal, bulgar and bourghal, but when it all boils down to it, it’s actually steamed cracked wheat.
Bourghal has a light, fluffy consistency and slightly chewy texture when prepared.
How To Use:
To prepare, cover with boiling water and stand for 45- 60 mins. Stir with a fork and, when tender, drain and add it directly to recipes or refrigerate for a salad.
Use in tabouli or delicious pilaf.
Make bourghal burgers with vegetables and spices or use in Mediterranean and Middle Eastern cuisines.
