Cookie or Brownie? Which one to choose? Well, now you don’t have to choose because our Brookie recipe in a bag is the perfect combo of both of these favourite sweet treats! It combines a rich and chocolatey brownie base with golden chocolate chip cookies. Simply add a few ingredients from home, mix, layer and bake.
To Add:
For Brownie Mix:
• 110g butter, melted
• 2 eggs, lightly beaten
• 1 tsp vanilla extract
For Cookie Mix:
• 110g butter, softened
• 1 egg, lightly beaten
• 1 tsp vanilla extract
Method:
1. Preheat oven to 175˚C. Line a 20cm square cake tin with baking paper. Leave some of the paper hanging over the sides to make the brookie easier to remove later.
2. Place the contents of the brownie mix bag into a bowl. Add butter, eggs and vanilla extract. Mix until combined. Pour into the prepared baking tray.
3. Place the contents of the cookie mix bag into a bowl. Add butter, egg and vanilla extract. Use a wooden spoon to mix until just combined. Use your hands to fully mix to form a soft dough.
4. Place dollops of the cookie mix onto the brownie batter. Cover with aluminium foil.
5. Bake for 20 minutes. Remove foil and bake for a further 20 minutes until golden brown. Take care not to overcook.
6. Allow to cool in the tin before cutting.
Store in an airtight container for up to 4 days in the refrigerator.
Makes 16 brookies.
