This cassia cinnamon, it is the bark of an evergreen tree (Cassia Vera) that is widely cultivated in South-East Asia. The aromatic bark is used as a spice and has a flavour and aroma typical to the cinnamon family – sweet and slightly woody.

How to Use:

The fragrant sweetness of cinnamon is used in sweet or savoury recipes and hot or cold beverages. These cassia sticks can be used whole – perfect for bouquet garni – or ground for spice mixes. Cinnamon is a great addition to curries and hotpots, marinades and rubs. Use in stewed fruit, puddings and home-baked goodies. Or add to raw treats and chocolate. An essential ingredient in chai tea, cassia cinnamon is delicious in hot chocolate or coffee in place of sugar.

Storage:

Store in an airtight container in a cool, dry place, away from direct sunlight.
