Dried chillies have a very different flavour to fresh because the sugars have been caramelised, making them more intense and robust. When cooking, add the flakes when sautéing the oil and onion so that the flavours permeate the dish.
Keep crushed red chilli in shakers on the table so that guests can dial up the heat themselves.
How To Use:
Use this chilli when you want a bit of heat but you would rather that your socks stayed on. When possible, start by frying flakes in hot oil as this will help the flavour infuse through the whole dish but they can also be added to the liquid in slow dishes, sauces and soups.
Use 1 tsp dried medium chilli to replace 1 tbs fresh medium chilli. Dried chilli is usually four times hotter than fresh.
Make a really quick Spaghetti Aglio using chilli flakes, Australian olive oil & fresh garlic. Delicious & inexpensive.
