Fennel seeds are highly aromatic with a distinctive flavour of licorice.
They add a fabulous warmth to preserves, savoury dishes, desserts, baking, spice blends, meat rubs and beverages and can be used whole, toasted or freshly ground.
These are delicious with lentils in soups, salads and stews.
How To Use
Fennel seeds can be gently dry roasted to bring out extra flavour and aroma. They pair well with pork but also tomato dishes, fish, chicken and vegetables.
Sauté zucchini, Brussels sprouts or squash in oil with red onion, garlic and 1 tsp crushed seeds. Add 1 tbs balsamic vinegar and season.
Traditionally, candied fennel seeds are served after dinner to aid digestion and freshen the breath. They may even help with a gassy tummy. They’re very quick to make using a coconut sugar syrup.
