One of our most popular spices, cumin adds a deliciously nutty, peppery flavour with a unique combination of sweet and bitter which is loved in many cuisines but particularly North African, Middle Eastern and Indian.
Ground, it can be added at just about any time throughout cooking and is also an almost essential ingredient in rubs and spice blends.
How To Use
Use as is or gently roast in a dry pan to release more of the flavours before using in rubs or marinades for tofu, tempeh, chicken, meat and vegetables.
For a burrito filling, fry chopped onion and garlic, 1 tsp ground cumin, 1 tsp smoked paprika and 1 tsp chilli powder in olive oil then add 450 g black turtle beans that have been soaked overnight.
Try classic Middle Eastern mujadara, made with just lentils, rice, cumin and salt and served with crispy fried onions, yoghurt or tahini.
