Our Mushroom Risotto with Australian mushrooms is a recipe in a jar and is a convenient meal kit for making delicious risotto at home.

It is easily prepared with the stock of your choice and served with Parmesan cheese or kept vegan-friendly by using vegan cheese or nutritional yeast.


To Add:

• 1 Litre hot stock of your choice
• 1 tbsp olive oil (or 20g butter)
• Grated Parmesan cheese (optional)
• Chopped fresh parsley (optional)

Method:

1. Heat olive oil or butter in a large pan and pour in the contents of the jar. Gently coat the risotto in oil/butter on a low heat.
2. Once coated, add a ladle of hot stock into the pan and stir regularly over a medium heat until the stock is absorbed.
3. Repeat the process with one ladle full at a time until all stock is used and the risotto is cooked. This takes about 20-25 minutes.
4. Garnish with grated Parmesan cheese and chopped parsley.

Serves 3.

Keep it vegan-friendly by sprinkling with vegan cheese or nutritional yeast.
