Sage has a strong, distinct flavour that is reminiscent of Mixed Herbs. Sage is generally used with rich and fatty foods such as pork and goose, as the savoury astringency of sage creates an ideal balance to the rich food.
How to Use:
Sage appears in many European cuisines, notably Italian, Balkan and Middle Eastern cookery. It can be used in omelettes, frittatas, on pizza, in tomato sauce or for baking chicken or fish. Use sparingly in casseroles and with other savoury herbs in bread stuffings for poultry.
Store in an airtight container in a cool, dry place, away from direct sunlight. Refrigeration recommended in warm climates.
