Small pearl tapioca is made from the dried and roasted starch of tapioca root, and is a traditional food in many countries, it has many similar applications to traditional sago pearls.
When cooked, pearl tapioca swells into lovely translucent balls that have a delightful soft texture. This small pearl tapioca has a very subtle flavour, which makes it ideal to carry any flavour that is added.
How To Use:
Try old fashioned tapioca pudding or make the Thai version with coconut milk and mango.
Use these when a recipe calls for sago.
To make your own bubble tea, boil pearls in a sugar syrup for a few minutes before adding to black tea, milk and extra sweetener.
Add 1 cup of pearls to soups in the last 20 mins but adjust the liquid if needed as they will thicken it slightly. They’re fantastic with miso and shitake broth as well.
