Teff is an ancient grain that makes the flour traditionally used to make injera, a popular Ethiopian flatbread. It is naturally gluten free and has a subtle, earthy flavour that is slightly nutty and a pale beige colour.
How To Use:
It can be used for other baking as well such as pizza bases, pastry and pancakes and can be used to thicken soups and sauces.
Teff flour is often best when blended with other flours such as buckwheat, tapioca or millet flour as well as wheat flour. It absorbs more liquid than other flours so adjust the recipe, if needed.
