Organic Anzac Biscuit Mix is a recipe in a jar that only needs a few wet ingredients added to create melt in your mouth biscuits.

Just add wet ingredients, mix, bake and before you know it, the delightful aroma of warm biscuits will be wafting from the oven ready for you to enjoy.

To Add:

• 125g unsalted butter (or coconut oil)
• 2 tbs maple syrup (or rice malt or golden syrup)
• 2 tbs boiling water
• ½ tsp bicarb soda
• A pinch of salt

Method:

1. Preheat oven to 160˚C. Line two baking trays with silicone mats.
2. Place contents of jar into a large bowl and mix until all ingredients are combined.
3. Melt butter and maple syrup. Set aside to cool for a few minutes.
4. Add 2 tablespoons of boiling water and the bicarb soda to the butter mix. Mix quickly and then pour into the dry ingredients. Stir until well combined.
5. Roll heaped tablespoons of dough into balls. Place on baking tray, about 10cm apart. Flatten slightly with a fork.
6. Bake for 12 minutes or until golden brown. Cool on a wire rack.

Any leftover cookies can be stored in the jar for up to 7 days. Suitable for freezing.
