Freekeh, what a fun word and what a versatile ingredient. It’s made from green duram wheat that is roasted to give it a rich, smoky flavour with a hint of nuts.
How To Use:
Use freekeh in Mediterranean and Middle Eastern cuisines.
Make pilaf, add it to stews, soups and casseroles or make stuffing for roasted capsicum or eggplant rolls.
Uncooked freekeh can be added directly to soups and slow cooked dishes, allowing plenty of liquid and around 30 mins to cook.
