These are the more common variety used in cooking because they have a wonderful, spicy flavour and aroma that is milder than brown mustard.

They will add a tang and light spiciness to meat dishes, pickles and chutney and can be roasted to sprinkle onto vegetables.

In curries, temper them first in hot oil so that their flavour infuses throughout the dish.


How To Use

Pickled mustard seeds are a fabulous way to add tangy, bright flavours to sandwiches, dressings and charcuterie.

Soak ½ cup seeds in ¾ cup apple cider vinegar and ½ tsp salt for two hours. Place in a saucepan with 2 tbs honey and black pepper. Bring to the boil then simmer 20 mins. Stir in 2 tbs extra ACV. Seal in a jar and refrigerate. Add other flavours such as chilli flakes, aromatic spices or even whiskey.

Sauté in oil or dry roast to add aromatic warmth to curry pastes and spice blends, chutneys and sauces.
