Citric acid has a lot of tricks up its sleeve such as stopping food like guacamole or apple slices going brown, being the acid when making ricotta and adding tang to a dish without extra liquid.
It can even be added to sourdough to ramp up the sour.
It’s not just for cooking though. It will also remove scale and hardwater stains from kettles and coffee machines.
How To Use:
Use citric acid in place of lemon juice or vinegar when you want tartness without extra liquid or when making ricotta or paneer.
It can also amp up the acid in dishes such as lemon curd, sourdough and soups as well as in cocktails where sour is often a much needed flavour.
Add ¼ tsp citric acid for each avocado in guacamole to brighten the flavour and help stop it going brown.
Blend citric acid with sugar and use to coat homemade gummies for a classic sweet and sour flavour.
