Crushed potatoes are washed to extract the starch, then dehydrated to produce this naturally gluten-free potato starch. It has a mild flavour that doesn’t have any potato taste.
It is different from potato flour, which contains the whole potato.
How To Use:
Potato starch is a good 1:1 replacement for cornflour in batters when deep frying as it handles high temperatures very well and will give a crispier result.
It is handy for thickening sauces and pie fillings, just mix it with cold water first before adding to hot dishes to prevent lumps.
Potato starch is often combined with gluten free flours in baking as it binds well, improving the structure and texture with light, fluffy results.
