Plum puddings are not that hard to make, they just take a little bit of planning but fortunately we’ve done that part for you.
Our Plum Pudding is based on a traditional recipe with Australian prunes and mixed fruit but we’ve made ours to be gluten friendly with the addition of banana flour. Banana flour is perfect for plum puddings as it holds moisture giving that rich, slightly dense texture that we all love.
This recipe is gluten friendly and can be adapted for guests who are vegan as well.
Cook this plum pudding in a 10cup capacity pudding basin. It can be cooked on the stove top but is even simpler if you have a slow cooker. All of the instructions will be on the recipe card that comes with the kit.
Serve the plum pudding warm with any combination of custard, cream or ice cream.
And, here’s a tip. Use the calico bag as a Christmas ham bag! Just wash it in 2 cups of water combined with 2tbs vinegar, squeeze it out and leave it damp when storing the ham in the fridge. Re-rinse the bag every couple of days.

100g Australian apricots
150g Australian pitted prunes
200g Australian banana flour
200g brown sugar
2tsp organic bicarb soda
3tbs mixed spices
You will need to add:
250g butter (or coconut oil)
1 cup brandy (or orange juice)
1/2 cup jam (“fruits of the forest” or any dark berry)
4 eggs
