Keep a packet of Banana Flour Pancake Mix in the pantry for an easy and delicious breakfast. Make mini pancakes topped with a single piece of banana and a dob of cream to serve as finger food to guests.
To Add:
• 3 large eggs, whisked
• 4 tbs maple syrup (or similar)
• 1 tsp vanilla extract
• 1½ cups almond milk (or similar)
• Juice of ½ lemon
• 1-2 mashed bananas (optional)
• Oil for cooking (coconut is ideal)
Method:
1. Whisk eggs, maple syrup, vanilla extract, almond milk and juice in a large bowl.
2. Add the dry ingredients from this bag.
3. Mix until well combined. Add optional mashed bananas at this step, if desired.
4. Heat oil in a pan on medium heat.
5. Spoon dollops of batter into pan. Cook until small bubbles appear and pop.
6. Flip pancakes and cook on the other side for a few more minutes.
7. Serve with fresh fruit, yoghurt, maple syrup or your favourite toppings.
