These small dried Black Eye Beans are white or cream coloured with a distinctive black spot where the fresh pea was joined to the pod. They have a soft texture when cooked and a creamy flavour that takes on the tastes of spices and sauces beautifully.
They’re also easy to sprout for stir fries and salads.
How To Use:
Traditionally used in deliciously sweet, Asian sticky rice puddings topped with coconut milk. Use to make fritters like fried acarajé balls or veggie burgers.
Try a Portuguese migas with kale, breadcrumbs and pine nuts or a mixed bean salad with olive oil, garlic and herbs. Include in lunch box wraps or mash for bean dips.
There’s no need to presoak, just rinse and then simmer in plenty of water or in a casserole or soup for 45 mins.
