Green Split Peas
Dried split green peas are quick and easy to cook and are a convenient pantry standby. These peas are simply processed to remove the outer husk then split in half.
Green Split Peas have a mild earthy flavour and a firm, smooth texture. They hold their shape when cooked or they can be boiled until soft and creamy. A perfect addition to veggie burgers, hot pots and hearty soups.
How to Use:
Green split peas do not need to be soaked before cooking; however, it will shorten cooking time. Before cooking rinse in a bowl of water and repeat several times. Cover peas with at least double the amount of water or stock. Bring to the boil, reduce heat to medium and cook for about 45 min. or until tender. Drain and use as needed. For soups, broth and slow cooked hot pots sauté onions and aromatics in a little oil before adding dried peas. Add broth or other liquid and cook as above, timing the addition of vegetables, meat or chicken with fresh herbs to be cooked when split peas are done. For creamier, soft peas continue cooking until desired consistency is achieved. Serve as a puree with herbs and garlic next to grilled fish or vegetables. Yummy smashed with sumac or Dukkah as a dip or spread. Green split peas are great in minestrone or with lamb shanks. Or add to veggie burger mix.
Store in an airtight container in a cool, dry place, away from direct sunlight. Refrigeration recommended in warm climates.
